I have another fun DIY
that would be a great gift
for Valentines Day!

Homemade Vanilla Extract

Here's what you do...

1. Split 1 whole vanilla bean in half down the center.

2. Add the vanilla bean to a glass jar that will seal tightly.

3. Add 1/3 cup Vodka.

4. Seal tightly and let sit for 6 months!

Mine will be done just in time for Fall Season baking!

Here's a drink you can surprise

your loved ones with!

Raspberry Lemonade

1 cup raspberries

2/3 cup sugar

1 cup lemon juice

2 cups water

1. Mull the raspberries and the sugar together.

2. Add the lemon juice and the water.

3. Voila! Serve chilled...and with a rim of colored sugar on your glass!

Raspberries truly are one of my favorites!

Vanilla Latte Cupcakes

Two of my

favorite things are...

Lattes

Cupcakes

So why not

put them together

for a Valentine Treat!

Vanilla Latte Cupcake

Batter:

1 cup flour

1/4 cup ground almond meal

1 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 cup whole milk

1 tbsp apple cider vinegar

3/4 cup oil

1 tsp vanilla extract

Frosting:

1/2 cup butter (softened)

2 cups confectioners sugar

2 tbsp half & half creamer

1 vanilla bean

1/2 tbsp instant espresso powder (such as Starbucks Via)

1. Preheat oven to 350 degrees.

2. In a small bowl, combine the milk and the cider vinegar. Set aside for 5 minutes. This will allow the mix to curdle slightly (don't worry, that's completely normal...and believe me, you won't be able to taste it!)

3. In a large bowl, mix flour, almond meal, baking powder, baking soda, and salt.

4. Mix the sugar, oil, and vanilla extract into the curdled milk.

5. Mix the wet and dry ingredients together then fill your cupcake liners 2/3 full.

6. Bake for 20 minutes, or until toothpick comes out clean. Transfer to a rack and cool completely before frosting.

7. For the frosting: On high speed, beat the butter, sugar, and creamer together until smooth.

8. Split the vanilla bean lengthways down the center and, with a knife, scrape out all the vanilla seeds. Add those seeds to the frosting mix.

9. Add the instant espresso and beat all together until creamy.

10. Frost your cupcakes and ENJOY!

There is something about Violets

I think it's because
when I see them
everything just seems
a bit sweeter.

So here is a fun and
SUPER EASY...

DIY for
Valentine's Day.

Here is what you need...

1 hole punch
scissors
twine
card punch (in what ever shape you like)
2 pieces of paper
1 paper lunch sac
1 potted violet

Step 1...

With the paper bag still closed,
cut the paper bag to the desired height.
Then cut rounds onto the top of the bag.

Step 2...

With your hole punch,
punch 6 holes into the top of the bag
(evenly spaced).

Step 3...

Open the paper bag then loop twine through the holes punched.

Step 4...

Tie the ends of the twine together,
adding your customized paper cut-outs
(so you can write a special note).

Step 5...

Add the beautiful violet!

This is such a sweet gift
to give to a neighbor on
Valentine's Day.

Farmhouse Chowder

I was really inspired after my

Brook Farm General Store post today.

So I kept with the farm theme

and made this...

Farmhouse Chowder

Adapted from Martha Stewart

1 whole chicken (3 to 4 pounds)
1 large onion

3 carrots

4 stems fresh flat-leaf parsley

10 whole pink peppercorns

2 tbsp chicken bouillon
2 tablespoons butter

3 tablespoons flour

1 small rutabaga, diced

4 ounces parsnip, diced

Coarse salt

Ground pepper

1 tsp fresh thyme

1 tbsp fresh sage
1/2 cup heavy cream
Oyster Crackers for a garnish

1. To make the homemade chicken stock: Place chicken, breast side down, in a large pot. Add enough water to just cover chicken. Add 1/2 of the onion (whole), 1 carrot (halved), parsley, bouillon, and peppercorns. Bring to a boil, partially covered. Reduce heat, and simmer gently for 1 hour.

2. Remove chicken, and let cool. Strain broth through a fine sieve, and bring to a simmer. Cook for 20 minutes to reduce and intensify flavor.

3. Shred chicken into bite-size pieces, discarding bones and skin.

4. Melt butter in a large pot over medium heat. Add the other halve of the onion (chopped), the rest of the carrots (diced), rutabaga, and parsnips, and cook until onion is translucent, about 5 minutes. Season with salt, pepper, thyme, & sage.

5. Stir in flour, and cook, stirring, for 1 minute. Whisk in reserved chicken broth, and bring to a boil. Reduce heat, and simmer until root vegetables are tender, 6 to 8 minutes.

6. Stir in reserved chicken and the cream, and heat until warmed through, about 1 minute. Serve warm with oyster crackers

Peanut Butter Toffee Cookies

I've had a leftover bag

of crumbled English Toffee

in my pantry since Christmas.

It has literally

been starring at me,

begging me to use it.

So last night I did...

And I made these!

Peanut Butter Toffee Cookies

1/2 cup butter

3/4 cup peanut butter

1 1/4 cup brown sugar

3 tbsp whole milk

1 tbsp vanilla extract

1 egg

1 1/2 cups flour

3/4 tsp baking soda

3/4 tsp kosher salt

1 cup crumbled English Toffee

1. Preheat oven to 375.

2. Beat butter, peanut butter, and brown sugar together until creamy.
3. Then add the milk, vanilla and egg.

4. In a separate bowl, sift the flour and baking soda together. Add the salt.
5. Add the dry mix to the mixer and combine. Then add the English toffee. Beat until incorporated.
6. Drop tablespoon size amounts on to a baking sheet and bake for 8 minutes (do not over bake).
7. Cool on a cooling rack for a few minutes.
8. Then Enjoy!!

clothing swap!

in this economy,

it's not always feasible

to buy new clothes all the time.

We all contributed by

for dinner the other night

and it reminded me of

the food that I would

daily enjoy in Nepal.

Yellow Lentil Soup

Adapted from Martha Stewart

1 teaspoon coconut oil
1 teaspoon ground coriander seeds

2 cups vegetable stock

4 cups chicken stock
1 1/2 cups yellow lentils (12 ounces)

Salt & Pepper

1. Heat oil and coriander seeds in a medium saucepan over high heat for 1 minute.

2. Add stock and lentils. Bring to a simmer.

3. Reduce heat, and simmer gently, partially covered, until lentils are tender and most of the liquid is absorbed, 40 to 50 minutes. Stir in salt and pepper to taste

It might not come to a surprise to some of you

that Micah and I are in the process

of adopting and infant!

We still don't know when it will happen;

we have been told that it could take

anywhere from 2 weeks to 2 years...

(we are in month 3 of waiting)...

but during this time

I have been slowly creating a nursery.

And one thing

I can now cross off my list

is getting a bassinet.

I found this one

at a consignment store.

But when I found it,

it had a very ugly

white ruffle bib on it.

That would not do at all,

so I bought some fabric that I liked

and made a new one.

And it was my first time sewin

...anything!!!

I'm proud of myself.

Beef Short Ribs in a Tomato Sauce

Adapted from: The Pioneer Woman

8 whole Beef Short Ribs1
2 tbsp Olive Oil
Salt And Pepper, to taste
1 tbsp Sugar
8 cloves Garlic, Crushed
1 whole Onion, Diced
1 cup Red Wine
1 can (28 Ounce) Whole Tomatoes
1 can (14 Ounce) Tomato Sauce
1 tsp Salt
1/4 tsp Red Pepper Flakes
1/4 tsp Thyme
1 pound Spaghetti
Grated Parmesan Cheese

1. Preheat oven to 275 degrees.

2. Heat olive oil in a heavy pot over medium-high to high heat. Sprinkle short ribs with salt and pepper. Brown short ribs in oil, about 1 1/2 or 2 minutes per side. Remove to a plate.

3. Pour off excess oil. Throw garlic and onions into pot. Stir to cook for a minute or two, then add tomatoes, tomato sauce, wine, salt, red pepper flakes, and thyme. Stir to combine.

4. Set short ribs back into the pot, submerging as much as possible in the sauce. Cover pot and place into the oven.

5. Cook for 3 1/2 to 4 hours. Short ribs should be tender and falling off the bone.

we realized just how

gigantic Silas was!

I came down with a cold in April,

so I stayed in bed and

watched The Kennedys.

May was special

because I was able to

vacation in California

to see my friends

and family.

And Kelly threw a

beautiful garden party!

In June, Micah and I were finishing up

our adoption application

and having some photos taken

to send to the agency.

(no baby news yet though...sigh)

July was full of fun!

Coffee

Gardening

Vintage Fairs

and

Cupcakes!

And I can't forget

the sailing!

August was so busy...

I didn't blog once!

But I gave a little wrap

up in September.

Camping...

Gardening...

Harvesting...

And party planning...

October, my favorite month of the year,

was time to go to the

pumpkin patch!

And I also hosted a

Fall Soup Swap!

And 30 days later,

I hosted a Halloween Party!

In November, I was able to

travel to California again

to celebrate Thanksgiving.

And in December,

we ended the year in Portland

celebrating Christmas with family.

I can't help

but be excited

at what this new year

will bring!

Apricot-Pistachio Sticky Buns

Adapted from Pioneer Woman & Martha Stewart

1 Batch of my basic Cinnamon Roll Dough Recipe

6 tbsp Apricot Jam (more if needed)

1/2 cup chopped Pistachios
1 cup butter, melted
1 cup brown sugar

1. Once you have made the cinnamon roll dough, roll it out of a floured surface.

2. Spread the apricot jam over the top making sure to distribute it evenly.

3. Drizzle the melted butter over the dough, then sprinkle the chopped pistachios and brown sugar on top.

4. Roll the dough up and cut into 1 inch slices. Bake according to the Cinnamon Roll Recipe directions.

Goat Cheese & Leek Crostini

Which made this Crostini completely divine.

Goat Cheese & Leek Crostini
Adapted from Smitten Kitchen

3 leeks, cut lengthwise and white and pale green parts sliced 1/4-inch thick
2 tbsp butter
olive oil
kosher salt
freshly ground black pepper
6 slices of baguette
2 ounces goat cheese crumbled

1. Heat a large skillet over medium. Once hot, add butter and olive oil and once they’re fully melted and a bit sizzly, add the leek slices. Sprinkle with 1/2 teaspoon salt and a few grinds of black pepper. Reduce heat to low, cover with a lid and cook leeks for 25 minutes, stirring them occasionally.

2. While leeks cook, brush bread slices with olive oil. Run under broiler until lightly toasted.

3. Once leeks are done cooking, spread the goat cheese on top of the toast and sprinkle with caramelized leeks.

Pear Upside Down Cake

So here is a

delicious recipe

that includes pears.

Pear Upside Down Cake!

(it will blow your mind...it is that good)

Pear Upside Down Cake

Adapted from Martha Stewart

4 tablespoons unsalted butter
1/2 cup packed brown sugar

2 ripe pears, peeled and cored

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs, separated
1/2 cup whole milk
1/4 teaspoon cream of tartar

1. Make the topping: Melt butter in a small pot over medium heat. Add brown sugar, stirring until dissolved.

2. Pour butter and sugar mixture into a cake pan and swirl to coat the bottom. Cut pears into 1/4-inch-thick wedges, and arrange them in a circular pattern over the brown-sugar mixture to cover completely; set aside.

3. Preheat the oven to 350 degrees.

4. Make the batter: In a medium bowl, whisk together flour, baking powder, and salt; set aside.

5. In a second bowl, cream butter and sugar until light and fluffy, about 2 minutes.

6. Add vanilla extract; beat to combine.

7. Add egg yolks, one at a time, beating to combine.

8. Alternating with the milk, gradually add the flour mixture to the butter mixture, and mix, just until the flour is incorporated.

9. In a separate bowl, beat reserved egg whites and the cream of tartar with a hand mixer until stiff.

10. Using a rubber spatula, fold egg whites into the batter.

11. Transfer to cake pan by carefully spreading the batter evenly, as to not disturb the pears.

12. Bake until well browned on top and a cake tester inserted into the center comes out clean, about 45 minutes.

13. Run a knife around inside of pan, and immediately invert the cake onto a serving dish.

14. Serve with a hot cup of coffee.

Here is a

wonderful

Fall Apple Cake

recipe

that I made

the other day.

It will make

your mouth

water!

Fall Apple Cake
Adapted from: Smitten Kitchen

4 apples
3/4 tablespoon cinnamon
3 tablespoons sugar

2 3/4 cups flour, sifted
1 tablespoon baking powder
1 teaspoon salt
1 cup vegetable oil
2 cups sugar
1/4 cup orange juice
2 1/2 teaspoons vanilla
4 eggs

1. Preheat oven to 350 degrees.

2. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.

3. Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla.

4. Mix wet ingredients into the dry ones, then add eggs.

5. Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top.

6. Bake for about 1 hour, or until a tester comes out clean.

Split Pea Soup

Split Pea Soup

Adapted from Everyday Food

6 cups chicken broth

16 oz dried green split peas

1 yellow onion, diced

4 carrots, sliced

1 celery stalk, diced

2 large cloves garlic

1 tsp dried thyme

2 bay leaves

1 lb. ham hock

salt and pepper

1. In a large bowl, bring broth to a boil.

2. Add split peas, onion, carrots, celery, garlic, thyme, bay leaves, and ham hock. Then season with salt and pepper.

3. Cover and cook on med-low for 2 hours, or until the split peas begin to break down. Stir occasionally.

4. When the peas being to break down, remove the ham and slice the meat off the bone.

5. Add the ham back into the soup and mash the peas up a bit.

6. Taste to adjust seasoning if needed.
