The Classics

Lately I have been watching a lot of classic movies.

You can ask Micah.

It seems like each night before I go to bed,
I have at least 30 minutes of "Jennifer-time"
in which I turn on an old movie to watch.

The other night it was this....




I realized that I had never seen it.
So naturally I "watched-it-now" on Netflix.

I loved everything about it.
The singing...
the dancing..
the music by Gershwin.

Chocolate Pumpkin Tart

I made this desert for a girls-night
that I hosted on Friday.

The richness of the chocolate
paired with the spicy pumpkin
was delicious.

And its a great alternative to your
traditional Pumpkin Pie.




Chocolate Pumpkin Tart
  • 20 chocolate wafer cookies
  • 2 tablespoons sugar
  • 3 tablespoons unsalted butter, melted, plus more for pan
  • 4 ounces semisweet chocolate, melted
  • 1 1/2 cups canned pure pumpkin puree
  • 1 large egg
  • 1/2 cup heavy cream
  • 1/4 cup packed light-brown sugar
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon pumpkin-pie spice
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees. In a food processor, pulse cookies and sugar until finely ground. Add butter; pulse until crumbs are moistened. Using the bottom of a dry measuring cup, press crumbs into bottom (but not sides) of a 9-inch removable-bottom tart pan. Place tart pan on a rimmed baking sheet; bake until set, about 12 minutes.
  2. Pour chocolate onto warm crust; spread with a spatula. Freeze until chocolate is firm, about 5 minutes. Brush sides of tart pan with butter; set aside.
  3. In a bowl, whisk together pumpkin, egg, cream, sugar, maple syrup, pumpkin-pie spice, and salt. Pour filling into prepared crust; bake on a rimmed baking sheet until set, 45 to 50 minutes. Cool 1 hour at room temperature; refrigerate 1 hour (or up to 1 day).
  4. Unmold tart (if sides stick, gently loosen with a knife). With two thin metal spatulas, transfer to a platter.

*Make sure to cool it for at least 1 hour, it is so much better chilled!!

To my shock and horror.....

American Girl has discontinued
the Samantha Doll.




I know this might sound quite childish.
Why should I care since I am quickly approaching 30
and have not played with dolls since I was 9.
But the nostalgic side of me is devastated.

If you spent the majority of your childhood
bonding with this toy,
then you will know my pain.

Time to recoup


Today was the first day back to work
after the 2 week holiday.

The Artistic Side

Yesterday some friends and I decided
to tap into our artistic side
by going to a pottery store and paint.


It was the kind of place where
you pick a piece of pottery, paint it,
then they fire it and you pick it up a week later.



I painted a few sushi plates.
It was something that I never thought
I would like to do,
but surprisingly I loved it.

My List

I love the New Years.
But I have never been much into making
New Years Resolutions.

The other day I stumbled upon this little questionnaire
while browsing other blogs.


As I filled it out I thought:
"This so much better (for me) than making a list of Resolutions"

It made me look back at my life and be encouraged
by the things I have been able to do so far.

And at the same time it challenged me
to try and complete one other item on the list
(something I want to try, obviously not the bad stuff) .
All the while remembering that I am still very young,
I have time to do much more in my life.

Pearls and Chocolate

I wore another Christmas gift today.
Micah gave me this pearl bracelet....
and I absolutely love it.


I was also given some Godiva Chocolates,
which happen to be my all-time favorite chocolates.

But here is the trick about Godiva Chocolates,
you must buy them from either the Godiva Boutiques
or directly from the company.

If you buy them at a local department store they are not good at all.

So now whenever I come across a Godiva Boutique
I have to buy at least two new flavors to try.

Last September I bought their Maple-Nut Truffle.
I almost fainted on the spot, it was so good.

More Candy.

I thought of my mom the whole time I made this candy. I always remember it being her favorite while I was growing up, and now it is one of my favorites as well.
I wish she were here to help me make a batch.

Honeycomb

1 c white sugar
4 T white corn syrup
2 t baking soda slightly dissolved into 1-2 teaspoons of water

1 c dark chocolate, chopped into small bits

1. Line a cookie sheet with waxed paper and lightly oil the waxed paper.

2. In a large pot, combine sugar and syrup over medium heat. As the sugar dissolves, turn down heat yet make sure that the mixture keeps to a steady, simmering boil. DO NOT MIX.

3. As soon as the mixture turns a light yellow*, sprinkle in the baking soda mixture. Again, DO NOT MIX! You want to keep the bubbles so the candy remains light and airy. The mixture will bubble up and increase 4 times in volume. Remove from heat and quickly pour mixture onto prepared cookie sheet. It hardens quickly.

4. Melt dark chocolate in a double boiler. When melted, spread over sponge toffee and cool until set. Break sponge into pieces and store well in a tightly-lidded container.

* Do not wait for the mixture to take on a golden hue....or it will be too late. Light yellow is what you're looking for.

Firsts

Yesterday was a first for me....
my first attempt to make candy.

I made homemade chocolate dipped marshmallows.




I was a bit nervous at first,
but decided to try it anyways.



So after letting them sit overnight
I finally tried one....

and it was wonderful!


They go perfect with a Peppermint Hot Chocolate.



Homemade Marshmallows

3 envelopes of Knox gelatin
1/2 cup cold water
2 cups granulated sugar
2/3 cups corn syrup
1/4 cup water
1/4 teaspoon salt
1 tablespoon vanilla extract

In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for 10 minutes.

Combine sugar, corn syrup, and 1/4 cup water in a small saucepan. Bring to a boil and boil hard for 1 minute. Pour boiling syrup into gelatin and mix at high speed.

Add the salt and beat for 12 minutes. Add vanilla and incorporate into mixture.

Scrape into a 9 x 9-inch pan lined with oiled plastic wrap and spread evenly. (Note: Lightly oil hands and spatula or bowl scraper). After pouring marshmallow mixture into the pan, take another piece of plastic wrap and press mixture into the pan.

Let mixture sit overnight. Remove from pan, dredge the marshmallow slab with confectioners' sugar and cut into 12-20 equal pieces with scissors (the best tool for the job) or a chef's knife. Dredge each piece of marshmallow in confectioners' sugar.
