Since I have been
on vacation for a few days,
here is a bit about me

Red Lipstick.



What’s your weirdest obsession?
I can't cook
the same thing
twice.



What are you wearing today?
Grey Dress - Forever21
Purple Tights - unknown
Tan Heals -
Target
Slippers - JellyBeans Slippers
(they were a "joke gift" from Micah....

but I wear them all the time).



Why is today special?
I can finally bake my
Amish Friendship Bread.


What’s the last thing you bought?
Rooster Timer
from Anthropologie.




What are you listening to right now?

Rachael Ray and the crackling of the fire.
Yes it is May and we still have
to have a fire to keep warm.



What’s your favorite weather?

Fall.



What’s your most challenging goal right now?
Letting Micah balance the checkbook.
Yes, I tend to take control.



If you were having someone coming over for dinner,
what’s would be on the menu?

Appetizers: Coconut Shirmp
Salad: Summer Salad with Thai Coconut Dressing
Entrée: Grilled Ginger-Lime Chicken Thighs, Wild Rice Salad,
Dessert: Carrot Cake Cupcakes


If you could have a house totally paid for,
fully furnished anywhere in the world,
where would you like it to be?

Somewhere on the West Coast Beach.



What would you like to have in your hands right now?
Plane tickets to Europe.



What would you like to get rid of?
My refrigerator.
It's way to small.



If you could go anywhere in the world for the next hour,

Tahiti .... I really need the warmth.



Which language do you want to learn?
French.


What super power would you like to possess?
Time Travel.


What’s your favorite thing about the city you live in?
Friends.

Recently I've been inspired by the fashion of the 1930's.

Working with International Missions for the past 5 years.

Apricot & White Chocolate Cookies

When I was a kid
we had an apricot tree
in our backyard.

Our summers
were filled with...
1. helping Mom prune the tree
2. waiting patiently for them to ripen
3. sharing in a wonderful snack
as we played throughout the day.



So, when I found this recipe
I could not resist but try them.

They were so delicious.



Apricot and White Chocolate Oatmeal Cookies


Ingredients:
1/2 cup butter (softened)
1/2 cup brown sugar (packed)
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup rolled oats
1/2 cup dried apricots (chopped)
1/2 cup white chocolate (coarsely chopped)

Directions:
1. Cream the butter and sugar in a bowl.
2. Beat in the egg and vanilla extract.
3. Mix the flour, baking soda and salt in another bowl.
4. Mix the dry ingredients into the wet.
5. Mix in the rolled oats, apricots and white chocolate.
6. Place the dough onto a cookie sheet one table spoon at a time.
7. Bake in a 350F preheated oven for 8-10 minutes.

Mexico - Part Four

The city of Chapala,
where we stayed,
is known as a
resort town.


So it was filled with many different
markets and shops.
Beans were sold...

(which was amazing)...


People, just relaxing out in the sun...
