Smoked Lamb

I'm pretty new to this whole
eating lamb thing.

But so far
I am loving it!

Here is the amazing
smoked lamb recipe
that we devoured
this Easter.



Smoked Lamb

One 4 - 5 lb leg of lamb
8 cloves garlic
1 tbsp rosemary
1 tsp oregano
Juice from 1 lemons
4 tablespoons extra-virgin olive oil
Coarse salt (kosher) and freshly ground black pepper

1. Using a knife, make a series of small slits in the leg. 

2. On a cutting board, mince the garlic to make a garlic paste. Add the herbs.

3. Stuff a little bit of the paste into each of the slits. 

4. Rub the outside of the lamb with the lemon juice, then the olive oil. Cover with plastic wrap and refrigerate for at least 8 hours, or overnight. 

5. Remove from the refrigerator and let the lamb come to room temperature. Remove the plastic wrap and season the lamb with salt and pepper. 

6. When ready to cook, start the smoker on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes. 

7.  Roast the lamb for 30 minutes. Reduce the heat to 350 degrees F and continue to cook until the internal temperature is about 140 degrees F for medium-rare. 

8. Transfer the lamb to a cutting board and let rest for 15 minutes before slicing.

Apologies... & My Week in Instagrams.

So, you know when life gets so busy
that you don't have time to blog?...

Well, welcome to my last week!

I was so busy with helping host 20 people
who came to our campus to volunteer for a week
(they were so wonderful to use their vacation time
to do some construction work for our campus here at YWAM)...

and on top of that it was
Good Friday yesterday,
which meant I threw a huge
Good Friday Service
and Brunch for the campus.

Such a fun week...
but so busy and stressful
that I literally did not
get on my computer once.

Celery Flower DIY

So, I got board yesterday.
 
That happens to me a lot
when I'm on Spring Break. 

So I decided to make
handmade stationary. 

I borrowed this lovely idea
and made flowers out of
a celery stalk and some red paint!

Pork Lo Mein

I was finally able
to cook again last night!

It feels like forever since I've been able to
experiment in the kitchen.

Here's what I made...
and it was delicious!



Pork Lo Mein

3/4  lb. Lo Mein noodles, or Chinese egg noodles
vegetable oil
5 garlic cloves, minced
1 tbsp fresh ginger, minced
1/2 tsp red pepper flakes (or less if you want it less spicy)
salt & pepper
1/2 onion, sliced
1 carrot, thinly sliced
1 bell pepper, thinly sliced
1 cup snow peas, thinly sliced
2 boneless pork chops, thinly sliced
4 tbsp soy sauce
1 tbsp toasted sesame oil

1. Cook noodles according to the package direction, drain, then set aside.

2. In a large skillet, heat vegetable oil over med-high heat, add the garlic, ginger, and red pepper flakes. Cook for 2 minutes.

3. Add the pork and season with salt and pepper. Cook for a few minutes, then add the onion, carrot, and bell pepper. Cook until pork is done and veggies are cooked.

4. Add the snow peas and cook until tender yet still crisp.

5. Add cooked noodles and soy sauce. Toss together until noodles are coated with soy and everything is mixed well.

6. Remove from heat and drizzle with toasted sesame oil.

7. Serve and enjoy!
