Quiche

My mom and I
made this today
for breakfast.

It is by far,
the best Quiche
I have ever tasted.




Sausage & Mushroom Crustless Quiche

Ingredients:

1/2 medium onion, diced (1/2 cup)
6-oz cremini mushrooms (1 cup)
1/4 cup diced tomatoes
1 1/2 cup cooked sage flavored ground sausage (Jimmy Dean works good)
4 eggs
1/2 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp pepper
pinch red pepper flakes
1 1/3 cups milk
1/2 cup grated Parmesan cheese
handful of chopped spinach


Directions:

Preheat oven to 400F.

Lightly grease a 9-inch round pan.

In a medium frying pan, cook sausage onion and mushrooms with a bit of olive oil and butter over medium-high heat until onions are translucent and tender, sausage is fully cooked and mushrooms are browned. Set aside to cool for a few minutes.

In a large mixing bowl, whisk together eggs, flour, baking soda, pepper and salt. Whisk in milk, then stir in mushroom mixture with sausage, tomatoes and spinach.

Pour quiche base into prepared pan. Top with Parmesan cheese.

Bake for 30 minutes, or until center is set and the outside edge is golden brown.
