Kickin' Beef Burger



I was finally
able to cook again.

It feels
like it has
been forever.

It's been a
hectic week.




Kickin' Beef Burger

  • 2 cups store-bought coleslaw
  • 3 tablespoons chopped pickled jalapeno chiles
  • 1/4 cup jarred sun-dried tomatoes, finely chopped
  • 1 chipotle chile in adobo sauce, finely chopped, plus 1 tablespoon sauce
  • 1-1/2 pounds ground beef chuck
  • Salt and pepper
  • 8 slices pepper jack cheese
  • 4 tablespoons butter, softened
  • 4 onion rolls, split
  • 1 small red onion, thinly sliced
  • 20 chili-flavored kettle-style potato chips

  1. In a medium bowl, combine the coleslaw and jalapeƱos. In a small bowl, combine the sun-dried tomatoes, chipotle chile and adobo sauce.

  2. Preheat a grill or grill pan to medium-high. In a bowl, combine the beef, 3/4 teaspoon salt and 1 teaspoon pepper; shape into 4 patties. Grill the patties for 4 minutes, flip and cook for 4 more minutes, topping with the cheese during the last 2 minutes of cooking.

  3. Meanwhile, spread the butter on the rolls and grill until toasted. Spread the tomato-chipotle mixture on the roll tops and bottoms. Top each roll bottom with some red onion, potato chips, a patty, some coleslaw and a roll top.

Beef and Bean Burger



Since there are
only a few
more days left
of good summer
weather...

Micah and I
are trying
to get as much
grilling done
as possible.

Here is a
wonderful
Burger recipe
that we
just made.



Beef and Bean Burger

  • 1 pound ground beef sirloin
  • One 15-ounce can black beans, rinsed
  • 1/2 cup leftover white or brown rice, cold
  • 1 tablespoon grill seasoning
  • 1 tablespoon ancho chili powder
  • 1-1/2 teaspoons ground cumin (about 1/2 palmful)
  • 1-1/2 teaspoons ground coriander (about 1/2 palmful)
  • 1 tablespoon vegetable oil
  • 1 avocado
  • 1/2 small red onion, finely chopped
  • 1 jalapeno chile or serrano chile, seeded and finely chopped
  • 1 clove garlic, grated or finely chopped
  • Grated peel and juice of 1 lime
  • 1/2 cup sour cream
  • 4 crusty rolls, split
  • 4 leaves red-leaf lettuce
  • 1 tomato, sliced
  1. In a large bowl, combine the beef, beans, rice, grill seasoning, chili powder, cumin and coriander. Form into 4 patties. In a large skillet, heat the oil over medium-high heat. Add the patties and cook, turning once and lowering the heat slightly for the last few minutes, until browned, 12 minutes.

  2. While the burgers cook, in a medium bowl, mash together the avocado, onion, jalapeno, garlic, lime peel and lime juice. Stir in the sour cream.

  3. Layer each roll bottom with a lettuce leaf, a tomato slice, a beef patty, guacamole and a roll top.

Browned Butter Blueberry Muffins

Browned Butter Blueberry Muffins

Ingredients:
7 tbsp butter
1/3 cup milk
1 egg
1 egg yolk
1 tsp vanilla
1 1/2 cup flour
3/4 cup sugar
1 1/2 tsp baking powder
3/4 tsp salt
1 cup blueberries

For the Topping:
3 tbsp softened butter cut into chunks
1/2 cup flour
3 1/2 tbsp sugar

Directions:
1. Preheat oven to 375 degrees.

2. Melt butter in a small saucepan over medium heat. Keep an eye on it. You need to melt the butter until it starts to turn brown and stop crackling. Remove from the heat.

3. Whisk the milk, egg, egg yolk, and vanilla together then slowly add the melted butter.

4. Whisk flour, sugar, butter and salt together then add the melted butter and milk mixture. Gently fold in the blueberries.

5. For the topping, combine all the topping ingredients together and rub together with your fingertips until crumbly. Sprinkle over the muffin batter (which has been placed in prepared muffin pans).

6. Bake for 10 minutes for mini muffins and 18-20 minutes for regular sized muffins.

Carnitas


Yummy.

That is all
I have to say
about this meal.




Carnitas

1 lbs pork (cut into 1 inch cubes)
1/2 red onion, quartered
1 tbsp chili powder
1 tsp cumin
1 tsp oregano
1 tbsp salt
1 tbsp pepper
water

1. Place everything in a crock pot and add about 1 cup of water. Cook on high for 5 hours.

2. Remove pork and place in a stock pot. Cook on med-high heat until the water has boiled away and fat has rendered. Stir a few times to make sure that the meat has browned on all sides.

3. Serve with guacamole.

New York Coffee Cake


Yesterday we threw
a going away party
for our dear friends
Mark and Ashley Smith.

So we were
pretty busy
all day.

But I did
have time to
bake this!




New York Coffee Cake

Topping:
1/3 cup sugar
1/3 cup brown sugar
3/4 tsp cinnamon
1/8 tsp salt
8 tbsp (1 stick) butter, melted and warm
1 & 3/4 cups flour

Cake:
1 & 1/4 cups flour
1/2 cup sugar
1/4 tsp baking soda
1/4 tsp salt
6 tbsp butter, softened and cut into chunks
1 egg
1 egg yolk
1 tsp vanilla
1/3 cup buttermilk


For the Topping:
1. Whisk in a small bowl sugars, cinnamon, salt and butter until combined.
2. Add flour and stir with a spatula until it forms a cohesive dough.

For the Cake:
1. Preheat oven to 325 degrees.
2. In a standing mixer, mix flour, sugar, baking soda and salt on low speed (about 1 minute).
3. Add butter one chunk at a time until batter resembles moist chunks.
4. Add eggs, vanilla and butter milk on med-high speed until light and fluffy.
5. Transfer batter to a prepared baking pan (I used a spring-form pan) and top with all the crumb topping.
6. Bake for 35-40 minutes.

Banana Muffin with Streusel Topping

Banana Muffin with Streusel Topping

Streusel:
1/2 cup chopped, toasted walnuts

1/4 cup old fashioned oats
1/4 cup brown sugar
2 tbsp. flour
1/4 tsp. baking powder
1/8 tsp. salt
2 tbsp. butter at room temp., cut into tiny pieces

Muffin:
1 1/2 cup all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
2 med. mashed ripe bananas
1 lg. egg
1/2 cup half and half
1/4 cup butter, melted
1/3 cup brown sugar
1 tsp. vanilla

Directions:
Preheat oven to 350 degrees.

To make streusel: mix walnuts, oats, sugar, flour, baking powder, and salt. Kneed in butter with your fingers until well combined.

To make muffins: sift flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg in a medium size bowl. In a large bowl, mix bananas, egg, half and half, butter, brown sugar, and vanilla. Wisk in dry ingredients until combined.

Divide into muffin pans and top with streusel. Bake for 25-30 minutes.

Strawberry Turkey Club Sandwich



Now I know
this recipe
sounds
a bit strange
but please
stay with me...

it is amazing!

By far
one of the best
sandwiches
I have had
in a long time.




Strawberry Turkey Club Sandwich

Ingredients:
12 oz bacon
1 lb slicked turkey breast
salt and pepper
1 avocado
2 tbsp lemon juice
1/3 cup mayo
6 slices whole wheat toast
2 cups lettuce (or baby spinach)
1 cup sliced strawberries

Directions:
1. Cook bacon until crispy then drain on paper towels.
2. Using a food processor (or you can do it by hand) puree avocado and lemon juice, then transfer to a bowl and stir in the mayo. Season with salt and pepper.
3. Assemble the sandwich: bread, avocado spread, strawberries, lettuce, chicken, bacon, avocado spread, and lastly another piece of bread.

Makes 3 sandwiches.

Oven Baked Fries with Herbes de Provence



Last night for dinner
Micah and I had...

Hamburgers and Fries!

Both were good
but the Fries
were amazing!

So I think
I will share
the recipe.




Oven Baked Fries with Herbes de Provence

Ingredients:
4 Russet Potatoes
2 tbsp olive oil
1/2 tsp Herbes de Provence
1 tsp sea salt

Directions:
Preheat your oven to 400 degrees.

Slice washed potatoes into strips and toss with 1 tbsp of olive oil.

Coat a sheet pan with the remaining 1 tbsp of olive oil and then layer the potatoes on the sheet.

Place in the oven for 20 minutes to bake. Then (after the 20 minutes) repeatedly toss the potatoes every 10 minutes until they are crispy.

Remove from the oven and immediately season with salt and herbes du provence.

Serves 2 (very hungry) people.

Back Home....and a Recipe.


After spending
the summer
in Nebraska.

Micah and I
are back home
in Montana.

I wanted to cook
a yummy dinner
for our first night back.

So I made...

Hot-Sauce Grilled Chicken
Sauteed Green Beans
and
Mediterranean Pasta Salad.




It all turned out
so delicious.

And this
Pasta Salad recipe
is now one of
my favorites.



Mediterranean Pasta Salad
serves 2

Ingredients:
1/2 lb. Penne pasta
4 cherry tomatoes (quartered)
1/8 cup chopped red bell pepper
2 tbsp chopped peppercinis
slivered red onion (how ever much you like)
1 tbsp basil
cheese (either Feta or Parmesan)
1/8 cup red wine vinegar
1/2 tbsp stone-ground mustard
1/4 cup olive oil
1 clove garlic
1 tbsp sugar
salt and pepper

Directions:
Mix the crushed garlic and the red wine vinegar together and let it set while you prepare the rest.

Cook the penne then toss with a little olive oil (so that the noodles wont stick together). Then let cool.

Add the mustard and sugar to the vinegar mixture and combine. Slowly drizzle in olive oil, whisking consistently.

Toss all together and chill for 30 minutes.
