New York Coffee Cake


Yesterday we threw
a going away party
for our dear friends
Mark and Ashley Smith.

So we were
pretty busy
all day.

But I did
have time to
bake this!




New York Coffee Cake

Topping:
1/3 cup sugar
1/3 cup brown sugar
3/4 tsp cinnamon
1/8 tsp salt
8 tbsp (1 stick) butter, melted and warm
1 & 3/4 cups flour

Cake:
1 & 1/4 cups flour
1/2 cup sugar
1/4 tsp baking soda
1/4 tsp salt
6 tbsp butter, softened and cut into chunks
1 egg
1 egg yolk
1 tsp vanilla
1/3 cup buttermilk


For the Topping:
1. Whisk in a small bowl sugars, cinnamon, salt and butter until combined.
2. Add flour and stir with a spatula until it forms a cohesive dough.

For the Cake:
1. Preheat oven to 325 degrees.
2. In a standing mixer, mix flour, sugar, baking soda and salt on low speed (about 1 minute).
3. Add butter one chunk at a time until batter resembles moist chunks.
4. Add eggs, vanilla and butter milk on med-high speed until light and fluffy.
5. Transfer batter to a prepared baking pan (I used a spring-form pan) and top with all the crumb topping.
6. Bake for 35-40 minutes.

I wish I could have been there too. I would have loved to try it...but mostly just to be with you. It looks wonderful.
