Pokhara

I was able
to travel
to Pokhara
for the first time.

It was every bit
as beautiful
as I
expected.












I will still be
in Nepal
for another
5 1/2 weeks...

but I will
continue to post
as much as I can.

Monkey Bread


Quick
Easy
and
Delicious


If you have
never had
Monkey Bread...

then you must try
this recipe.

It was
amazing!



Monkey Bread
(via: Pioneer Woman)

1/2 cup Brown Sugar
2 sticks of butter
2-3 teaspoons Cinnamon
3 cans of Buttermilk Biscuits (the ready-to-bake kind)
1 cup Sugar

Directions:

Preheat the oven to 350 degrees

Now open up all three cans of biscuits and cut each biscuit into quarters.

Combine the 1 cup of regular sugar with 2 teaspoons of cinnamon in a large zip-lock bag. Shack to mix evenly.

Drop all of the biscuit quarters into the cinnamon-sugar mix and shack vigorously to coat all the biscuit pieces.

Spread the biscuit pieces out evenly in your bundt pan. You can grease the pan beforehand if you want.

Melt the two sticks of butter together with 1/2cup of brown sugar. The pour the butter over the biscuit pieces. It will almost cover all the biscuit pieces (yes...this is a lot of butter, but it is worth it).

Bake for 30-40 minutes.

Baked Garlic Pilaf

This was so
yummy!

another wonderful
side dish.




Baked Garlic Pilaf

2 cups of butter
1 cup long grain rice
2 cups chicken broth
1/2 tsp salt
1/4 tsp pepper
5 cloves of roasted garlic (smashed and chopped)


Directions:
Preheat oven to 375 degrees.

In a sauce pan, melt butter over med-high heat then add the rice. Stir until the rice is coated with the butter.

Stir in 1 cup chicken broth and add the roasted garlic, then bring to a boil.

Pour rice mix into casserole dish and bake for 25 minutes.

Add left over cup of chicken broth and bake for another 45 minutes.

Serve!

Pumpkin Coconut Bread



Oh how I love
October.

One of the reasons
I love it so much
is because of all
the yummy
Pumpkin recipes
you can make!

I made this
for breakfast
today...




...so delicious.



Pumpkin Coconut Bread

Ingredients:
15oz can pumpkin puree
1/2 cup canola oil
2 eggs
1 tsp vanilla extract
1 1/4 cup sugar
1 1/2 cup flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
1/2 cup chopped pecans
1/2 cup shredded coconut

Topping:
1/4 cup shredded coconut
1/4 cup chopped pecans

Preheat oven to 350 degrees and grease a 9x5 loaf pan.

In a large bowl, mix pumpkin puree, sugar, eggs, canola oil, and vanilla.

In another large bowl, mix flour, salt, baking soda and powder, and spices together. Then add to the pumpkin batter and mix well.

Fold in the 1/2 cup pecans and 1/2 cup coconut then pour into the loaf pan.

Bake for 20 minutes then add the topping. But make sure to gently push the topping down into the batter, or else the coconut might burn.

Bake for another 30 minutes, slice, and serve!
