Spicy Pasta with Broccoli and Sausage


I made
this
for dinner
last night.

 I have been
loving the
pasta and sausage
combination.

 


Spicy Pasta with Broccoli and Sausage
Adapted from: A Good Life Eats 

1 cup sundried tomatoes, chopped
2 cups mild Italian sausage
1 red onion thinly sliced
2 garlic cloves, minced
1/3 cup dry white wine
1/2 tsp crushed red pepper (more if you want it spicier)
salt and pepper
2 cups broccoli
8 oz pasta, cooked

1. In large saute pan, drizzle pan with olive oil over medium-high heat. Add sliced sausage and cook. And onions and cook until tender, then add the broccoli. Add garlic and cook for one minute.

2. Deglaze the pan with the white wine. Add the sundried tomatoes. 

3. Salt and pepper, then add the crushed red pepper.

4. Serve topped with lots of fresh grated Parmesan cheese.

Vanilla Almond Cupcakes


It feels
like it
has been
forever
since I
have been
able to
bake
something.

I have
been
cooking...

but I
haven't
been 
cooking
anything
special.

Until
today...

 

Vanilla Almond Cupcakes with Huckleberry Frosting

Ingredients:
1 cup flour
1/4 cup almond meal
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1/3 cup canola oil
1 cup coconut milk
1/2 tsp almond extract
1/2 tsp vanilla extract

Frosting:
1 stick of butter 
1 cup powdered sugar
2 tsp Huckleberry Jam

Directions:

1. Mix dry ingredients together in a large bowl, then mix wet ingredients together in a small bowl. 

2. Make a well in the center of the dry ingredients then add the wet ingredients. Mix until smooth.

3. Fill cupcake liners 2/3 full with the batter. Bake at 350 degrees for 20 minutes or until golden.

4. For the frosting, beat the butter powder sugar and Huckleberry together until smooth.

5. When cupcakes are completely cooled; frost and enjoy.

Bananas Foster Bread


I made this for
breakfast
a few
days ago.

And it was
so delicious...

especially
the streusel
topping!

 


Bananas Foster Bread

For the Bread:
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1 cup sugar
1/2 cup vegetable oil
2 eggs
3 medium bananas, smashed
1 tsp vanilla extract
3 tbsp milk

For Streusel Topping:
1 1/2 cups chopped walnuts
1/3 cup flour
1/4 cup brown sugar
1/2 tsp cinnamon
4 tbsp butter

For the Rum Glaze:
4 tbsp butter
2 tbsp water
1/4 cup brown sugar
1/4 cup rum


1. Preheat oven to 350 degrees. 

2. Combine ingredients for streusel topping in a medium bowl and mix with fingers until a crumbly topping forms and butter is evenly distributed.

3. Whisk flour, baking soda, and baking powder in a bowl and set aside.

4. On medium speed, beat butter and vegetable oil in a large bowl. Add eggs one at a time, beating after each egg to incorporate. Add the mashed bananas and the vanilla, then alternating, add the flour mixture and the milk until completely combined. 

5. Spread batter over prepared loaf pan and sprinkle streusel topping on top. 

6. Bake for 60 minutes, or until knife come out clean from the center of the loaf.
