Allspice Crumb Muffins


These were
the most
fluffy
light
muffins
I have
ever eaten.

And the spice
in them
was perfect
for a
cold morning.



Allspice Crumb Muffins

Crumb Topping:
1/2 cup flour
1/2 cup packed brown sugar
1/2 tsp allspice
5 tbsp butter, cut into pieces

Muffins:
2 cups flour
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp allspice
1/4 tsp salt
1/4 cup brown sugar, packed
8 tbsp butter, melted & cooled
2 lg eggs
3/4 cups milk
1/4 tsp vanilla extract
Zest from 1 lemon

1. Preheat oven to 375 degrees.

2. To make crumb topping, mix four, sugar, allspice together. Add butter pieces and mix with your hands until crumbs form.

3. In a large bowl, mix flour, sugar, baking powder, allspice, and brown sugar. Mix until there are no large clumps. 

4. In a smaller bowl, mix melted butter, eggs, milk, and vanilla. When mixed, add to the flour mixture and stir with a spatula until well combined. Stir in the lemon zest.

5. Divide into each muffin line and sprinkle crumb topping on top.

6. Bake for about 20 minutes or until knife comes out clean.
